Title: Vegetable Meat Loaf

Yield: 2 Servings
1/2 lb Ground beef
1 sl Bread; in small pieces
1 lg Egg; beaten
1/4 c Shredded carrot
2 tb Fine chopped onion
2 tb Fine chopped bell pepper
2 tb Fine chopped celery
1/2 ts Salt
ds (ea) pepper & garlic powder
5 tb Chili sauce or ketchup;
- divided
In a bowl, combine ground beef, bread, egg, carrot,
onion, green pepper, celery, seasonings and 2 tbs
chili sauce.
Form into a loaf in an ungreased 5 3/4" X 3" X 2" loaf
pan. Spoon remaining chili sauce over loaf.
Bake, uncovered @ 350ºF/175ºC for 45-50 minutes or until
meat is no longer pink.
