    Title: Rhubarb Crisp
    Categories: Fruits, Grains, Herbs, Desserts
    Yield: 8 servings

    3/4 c Sugar
    3 tb Cornstarch
    3 c Sliced rhubarb
    2 c Sliced, peeled apples
    +=OR=+
    2 c Sliced strawberries
    1 c Quick-cooking or
    - old-fashioned oats
    1/2 c (packed) brown sugar
    1/2 c Butter; melted
    1/3 c A-P flour
    1 ts Ground cinnamon
    Vanilla ice cream; opt

    In a large bowl, combine sugar and cornstarch. Add
    rhubarb and apples or strawberries; toss to coat. Spoon
    into an 8-in. cast-iron skillet or other ovenproof
    skillet.

    In a small bowl, combine the oats, brown sugar, butter,
    flour and cinnamon until the mixture resembles coarse
    crumbs. Sprinkle over fruit. Bake @ 350ºF/175ºC until
    crisp is bubbly and fruit is tender, about 45 minutes.
    If desired, serve warm with ice cream.

    Title: Gnocchi Chicken Skillet
    Categories: Potatoes, Poultry, Sauces, Vegetables, Herbs
    Yield: 4 Servings

    16 oz Bag potato gnocchi
    1 lb Ground chicken
    1/2 c Chopped onion
    2 tb Olive oil
    26 oz Jar spaghetti sauce
    1/4 ts Salt
    1/2 ts Dried oregano
    Shredded Parmesan cheese

    Cook gnocchi according to package directions. Meanwhile,
    in a large cast-iron or other heavy skillet, cook
    chicken and onion in oil over medium heat until chicken
    is no longer pink; drain if necessary. Stir in the
    spaghetti sauce, salt and oregano; cook until heated
    through, 5-10 minutes.

    Drain gnocchi; gently stir into skillet. Sprinkle with
    Parmesan cheese.

    Title: Chocolate Pecan Skillet Cookie (Pizookie)
    Categories: Cookies, Snacks, Chocolate, Nuts
    Yield: 12 servings

    1 c Butter
    1 c Sugar
    1 c (packed) brown sugar
    2 lg Eggs; room temp
    2 ts Vanilla extract
    3 c A-P flour
    1 1/2 ts Baking soda
    1/2 ts Kosher salt
    1 c Bittersweet (60% cacao)
    - chocolate baking chips
    1 c Chopped pecans; toasted
    Vanilla ice cream; opt

    Set oven @ 350ºF/175ºC.

    In a 12" cast-iron skillet, heat butter in oven as it
    preheats. Meanwhile, in a large bowl, stir together
    sugar and brown sugar. When butter is almost melted,
    remove skillet from oven and swirl butter until
    completely melted. Stir butter into sugar mixture; set
    skillet aside.

    Beat eggs and vanilla into sugar mixture. In another
    bowl, whisk together flour, baking soda and salt;
    gradually beat into sugar mixture. Stir in chocolate
    chips and pecans. Spread mixture into buttered skillet.

    Bake until toothpick inserted in center comes out with
    moist crumbs and top is golden brown, 35-40 minutes.

    Serve warm, with vanilla ice cream if desired.

    Title: One-Skillet Pork Chop Supper
    Categories: Pork, Vegetables, Potatoes, Soups
    Yield: 4 servings

    1 tb Butter
    4 1/2" thick-7 oz ea pork loin
    - chops
    3 md Red potatoes; in small
    - wedges
    3 md Carrots; in 1/2" slices
    +=OR=+
    2 c Fresh baby carrots
    1 md Onion; in wedges
    10 3/4 oz Can cream of mushroom soup;
    - undiluted
    1/2 c Water
    Cracked black pepper
    Chopped fresh parsley

    In a large cast-iron or other heavy skillet, heat butter
    over medium heat. Brown pork chops on both sides; remove
    from pan, reserving drippings.

    In same pan, saute vegetables in drippings until lightly
    browned. Whisk together soup and water; stir into
    vegetables. Bring to a boil. Reduce heat; simmer,
    covered, just until vegetables are tender, 15-20
    minutes.

    Add chops; cook, covered 8-10 minutes. Remove from heat;
    let stand 5 minutes. If desired, sprinkle with pepper
    and parsley.

    Title: German Apple Pancake

    3 lg Eggs; room temp
    1 c Milk
    3/4 c A-P flour
    1/2 ts Salt
    1/8 ts Ground nutmeg
    3 tb Butter

    MMMMM--------------------------TOPPING-------------------------------
    2 Tart baking apples; peeled,
    - sliced
    4 tb Butter
    2 tb Sugar
    Confectioners' sugar

    Heat a 10" cast-iron skillet in a 425ºF/218ºC oven.

    Meanwhile, in a blender, combine the eggs, milk, flour,
    salt and nutmeg; cover and process until smooth.

    Add butter to hot skillet; return to oven until butter
    bubbles. Pour batter into skillet. Bake, uncovered,
    until pancake puffs and edges are browned and crisp, 20
    minutes.

    For topping, in a skillet, combine the apples, butter
    and sugar; cook and stir over medium heat until apples
    are tender. Spoon into baked pancake. Sprinkle with
    confectioners' sugar. Cut and serve immediately.

    Title: Honey Walleye

    1 lg Egg
    2 ts Honey
    2 c Crushed Ritz crackers
    1/2 ts Salt
    1 1/2 lb Walleye fillets
    1/2 c Oil
    Minced fresh parsley; opt
    Lemon wedges; opt

    In a shallow bowl, beat egg; add honey. In a shallow
    dish, combine crackers and salt. Dip fish in egg
    mixture, then in cracker mixture; turn until coated.8

    In a cast-iron or other heavy skillet, cook fillets in
    oil over medium heat until golden and fish flakes easily
    with a fork, 3-5 minutes on each side. If desired, top
    with parsley and serve with lemon wedges.

    Title: Pizza Rolls

    Yield: 8 servings

    1 lb Loaf pizza dough; thawed
    1/2 c Pasta sauce
    1 c Shredded mozzarella cheese;
    - divided
    1 c Coarse chopped pepperoni
    1/2 lb Italian sausage; cooked,
    - crumbled
    1/4 c Grated Parmesan cheese
    Minced fresh basil; opt
    Crushed red chile flakes;
    - opt

    Set oven @ 400ºF/205ºC.

    On a lightly floured surface, roll dough into a 16" X
    10" rectangle. Brush with pasta sauce to within 1/2" of
    edges.

    Sprinkle with 1/2 cup mozzarella cheese, pepperoni,
    sausage, and Parmesan. Roll up jelly-roll style,
    starting with a long side; pinch seam to seal. Cut into
    8 slices. Place in a greased 9" cast-iron skillet or
    greased 9" round baking pan, cut side down.

    Bake 20 minutes; sprinkle with remaining 1/2 cup
    mozzarella cheese. Bake until golden brown, 5-10 minutes
    longer. If desired, serve with minced fresh basil and
    crushed red pepper flakes.

    Title: Sweet Potato & Egg Skillet

    Yield: 4 servings

    2 tb Butter
    2 md Sweet potatoes; peeled,
    - shredded
    1 cl Garlic; minced
    1/2 ts Salt; divided
    1/8 ts Dried thyme
    2 c Fresh baby spinach
    4 lg Eggs
    1/8 ts Coarse ground pepper

    In a large cast-iron or other heavy skillet, heat butter
    over low heat. Add sweet potatoes, garlic, 1/4 teaspoon
    salt and the thyme; cook, covered, until potatoes are
    almost tender, 4-5 minutes, stirring occasionally. Stir
    in spinach just until wilted, 2-3 minutes.

    With back of a spoon, make 4 wells in potato mixture.
    Break 1 egg into each well. Sprinkle eggs with pepper
    and remaining 1/4 teaspoon salt. Cook, covered, over
    medium-low heat until egg whites are completely set and
    yolks begin to thicken but are not hard, 5-7 minutes.
