3 1/2 lb Chicken; in serving pieces
1 ts Salt
1/4 ts Black pepper
1 c Flour
2 lg Eggs
1 c Beer; as needed
2 tb Melted butter
2 tb Minced parsley
Fat for deep frying
Season the chicken pieces with the salt and pepper.
Make a smooth mixture of the flour, eggs and melted
butter. Then add as much beer as necessary to make a
smooth rather than thick batter. Add the minced parsley.
Coat the chicken pieces with the batter heavily and let
chill 1 hour in the refrigerator.
Heat the fat to 375ºF/190ºC degrees and deep fry the
chicken until golden brown. Pieces will float when done.
(About 15 - 20 minutes)
Drain and place in a shallow baking pan. Keep warm in a
preheated 200ºF/95ºC oven until time to serve, if
necessary.
